Low FODMAP Snack – Nutty Chocolate Bites

Are you looking for a suitable low FODMAP snack? Snacks can be quite difficult when you are following a low FODMAP diet or when you are trying to be healthy.
Eaten straight from the freezer, these bites taste very similar to Mars Bar ice creams. In fact, even if you aren’t a dark chocolate fan you may be quite surprised at just how tasty these are as the peanut butter balances out the bitterness of the chocolate quite nicely.
These low FODMAP snack bites are really quite addictive so be careful to only have 1-2 a day as a treat. They are ‘healthy’ but chocolate and peanut butter are both high calorie foods.
Ingredients (makes 4)
40g melted dark chocolate
4 tablespoons of smooth peanut butter (choose one which has no added sugar)
Method
- Using a metal baking tray or silicon cupcake cases, spoon out 4 seperate dollops of peanut butter
- Freeze for 8 hours
- Cover the frozen peanut butter balls in the chocolate and re-freeze for another 6 hours (or until solid)
- Enjoy! (in moderation!)
